Persimmons were first cultivated in China about 2,000 years ago and introduced to California and Southern Europe in 19th century.

Persimmon trees are among the more cold-tolerant tropical fruit trees, withstanding freezing temperatures easily. They’re deciduous trees, so expect your persimmon’s leaves to brown and fall in autumn.

When planting, consider that persimmon trees prefer deep, well-draining soils. Slightly acidic or neutral pH makes persimmos very happy. Deep mulch is beneficial for moisture retention.

Our persimmon trees at Incredible Edible Landscapes are grafted to ensure variety type. Our 2026 root stock is grown from American Persimmon seeds (Diospyros virginiana).

Although some persimmons can be eaten in their fresh-picked, crisp format, most varieties are astringent. This means they cannot be eaten before releasing their tannins via ripening.

Allow your persimmons to sit on the counter until they are *very* soft to the squeeze, practically a water balloon. The skin will become thin and delicate. We love freezing a ripe persimmon and then half-thawing in time for dessert.
