J. Moreau & Fils is a family-run estate in the Chablis region, with a history dating back several generations. They are known for crafting crisp, mineral-driven Chardonnays that showcase the subtle nuances of the Kimmeridgian limestone soils. The 2023 vintage enjoyed a mild, consistent growing season, allowing the grapes to develop bright acidity and pure varietal character.
The vineyards are planted on classic Chablis limestone and clay soils, providing excellent drainage and contributing a characteristic flinty minerality. Grapes are hand-harvested and gently pressed, with fermentation occurring in stainless steel to preserve freshness, followed by short lees ageing for added texture and complexity.
Appearance Pale straw with glints of green. The wine has a clear, luminous quality, with medium viscosity and slow-moving legs hinting at a refined, delicate body.
Aroma Fresh aromas of green apple, pear, and white peach are complemented by notes of citrus zest, wet stone, and subtle white flowers. A hint of flintiness emerges on aeration, enhancing its mineral expression.
Taste Crisp and precise on the palate, with flavours of green apple, lemon, and a touch of white blossom. The wine’s minerality and vibrant acidity create a clean, refreshing structure, balanced by a light, creamy texture from lees contact.
Finish Clean, zesty, and lingering, with a delicate saline minerality that underscores its freshness.
Food Pairing Fresh oysters with lemon amplify the wine’s bracing acidity. A light herb-roasted chicken also complements its delicate fruit and mineral character.
