Producer

Olivier joined his father Hubert at their family domaine in 1995 and now oversees 17 hectares of vineyard spread across 18 appellations. His wines are widely recognized as the best in the whole Saint-Aubin appellation and are principally from Premier Cru vineyards. Although not certified, Olivier has been practising organic viticulture across his vineyard parcels since 2007. In the cellar he uses no new oak, a high proportion of larger barrels and no sulphur for the first twelve months of the wines' life. One of his defining features as a winemaker is his capacity to adapt to the vintage and his profound understanding of the essence and condition of each vineyard. Very few winemakers across the whole of Burgundy can produce wines of such élan, definition and such concentration of fruit year-on-year.
