A bone-in sirloin steak is a sirloin cut with the rib bone still attached. The bone adds flavour during cooking as the marrow and fat slowly release into the meat, creating a richer, more complex eating experience than a boneless sirloin. It's a classic bistro cut — bold, satisfying and perfect for sharing between two.
The eating experience is similar but the bone-in version has an edge on flavour — the bone acts as a natural conductor of heat and releases fat and marrow as it cooks, basting the meat from the inside. It also looks more impressive on the plate. The boneless sirloin is easier to carve and cook evenly.
Bring to room temperature for 30-45 minutes. Season generously with sea salt. Sear in a very hot cast iron pan with beef dripping — 3 minutes per side for medium-rare. Baste with butter and thyme. Rest for at least 6 minutes before carving the meat off the bone and slicing against the grain.
