Gina has produced a gastronomic Sauvignon Blanc that combines crystalline acidity with a creamy, thick texture- think lemon, petrichor, coriander and guava with notes of yoghurt, honey and sourdough.
Gina Hildebrand knows a thing or two about biodynamics as she was brought up in her parents farm in northern California’ Sierra Foothills, who have been following such farming methods since 2007. After several harvests in France, New Zealand, Oregon and Napa, Gina is now based in Central Coast, where she farms 2.5ha of vineyards, in which she “leans into Mother Nature to work with her, rather than against her”.
Similar to her husband’s (Mikey from Scar of the Sea) approach to winemaking, her philosophy is based on using only organic and biodynamically grown fruit, fermentations using native yeast, no acid additions, minimal amounts of SO2 added, and the use of neutral French oak barrels for fermentation and ageing. Using her own words, “these wines are made with intention, love, and a deep respect for the land, carrying with them the spirit of the place they come from”.
