Francois le Saint Pouilly-Fumé 2022, is a Sauvignon Blanc from the Loire Valley, in France, produced from vineyards located mainly on clay soils rich in silicon. For this wine, the Vignerons have chosen a fermentation with indigenous yeasts, also respecting, for the work in the cellar, the rhythm of the lunar calendar. It ages in steel in contact with its own yeasts for a full year, before being bottled with a minimal amount of sulfur. The result is a wine with very fresh aromas, reminiscent of citrus fruits, in particular grapefruit, flowers and flint. On the palate, the sip is sharp, fresh and with a very persistent flavor.
