Iberico pork comes from the Black Iberian pig — a native Spanish breed prized for its ability to accumulate intramuscular fat, producing meat with exceptional marbling and a rich, nutty flavour. Traditionally acorn-fed (Bellota) in the Spanish dehesa forests, Iberico pork is considered some of the finest meat in the world.
Hot and fast — Iberico pork is best cooked to medium (slightly pink inside). Season with sea salt. Sear over very hot coals or in a cast iron pan — 3-4 minutes per side. The extraordinary intramuscular fat renders quickly. Rest for 5 minutes before serving. Don't overcook — the pink colour at medium is perfectly safe and essential for maximum flavour.
Each pack is 1kg, containing approximately 4-5 tomahawk steaks. The bone length may vary seasonally but the total weight will always be 1kg.
