The 2023 vintage benefited from optimal growing conditions, allowing for the development of concentrated flavours and balanced acidity. Grapes were meticulously hand-harvested at night to preserve their delicate aromas and flavours. Upon arrival at the cellar, the grapes were gently crushed and pressed. Fermentation was conducted with 30% of the wine cold-fermented in stainless steel tanks to retain freshness and fruit purity, while the remaining 70% was fermented in 300-litre French and Hungarian oak barrels, with 40% of this portion undergoing natural fermentation. The wine was then aged for 11 months before blending and bottling.
