Lamb Shoulder is so versatile and so easy to cook, you may end up putting it in your regular meal rotation.

When the lamb shoulder is slowly roasted or braised, the fat melts away leaving meat so tender and juicy it falls apart with the touch of a fork. Packed with flavor, you may find it hard to stop nibbling if any pieces remain at the end of the meal. Try serving the lamb shredded as a tasty alternative to shredded beef or pulled pork.

Hard to overcook and very forgiving, the lamb shoulder roast can also be grilled or chopped and toss into a stew.

Each roast is approximately 2.5 - 3 lbs. One shoulder will feed about 4 people (maybe 5). You’ll know it’s done when you can easily part the meat with two forks. Because the shoulder has more connective tissue, the best results come when you cook it slowly to an internal temperature of 190° - 200°F.
