The Land
The Cirillo Shiraz is made with grapes sourced from high altitude vines from Steingarten on the boarder of Barossa and Eden Valley ranges.
Vinification
The fruit is hand-picked early in the season, in mid January to retain natural acidity. Whole bunches of grapes are pressed in baskets. Then the juice is fermented in stainless steel tanks, without any maturation in oak. The bottles are then cellared for 5 years before release.
The wine
The colour is pale green and yellow, almost clear. There are lemongrass and lime on the nose, with noticeable smoky and mineral characters.
