If I could recommend only one whetstone for most people, this would be it.
The Shapton Kuromaku #1000 is the stone I recommend most often to both home cooks and professional chefs. It offers an excellent balance of cutting speed, durability, and ease of use.
One of the biggest advantages of the Kuromaku #1000 is that it wears much more slowly than many other #1000 grit stones, while still maintaining excellent sharpening performance. Because the stone stays flatter for longer, it is easier to maintain a consistent sharpening angle and achieve better results.
I still recommend flattening your stone regularly, regardless of the brand. However, compared to many traditional soaking stones, the Shapton Kuromaku is much easier to keep flat and requires less maintenance.
As a splash-and-go stone, there is no need for long soaking. Simply add water and start sharpening, making it ideal for busy kitchens and everyday use.
