Pignoletto is a local variety from Bologna Hills, a little paradise 20 minutes out of the city. The lively fruit is grown biodynamically and is firstly naturally fermented and then goes through a secondary fermentation in bottle. Sui Lieviti, or sur lies if you are francophile, means not disgorged. Don't forget to roll the bottle before pouring and enjoy this refreshing, textural, citrus driven juice.
