Each blade is hand honed using the traditional three step Honbazuke process, creating an ultra fine edge sharpened to approximately 9.5 to 12 degrees. The authentic thin Japanese blade profile allows for effortless, clean cuts across vegetables, proteins and delicate ingredients.
The handle is crafted from Karelian Masur birch, a rare and highly prized wood known for its distinctive grain and durability. Ergonomically shaped and beautifully balanced, it provides a secure, comfortable grip. Rounded spine and heel details further enhance comfort during extended prep sessions.
