Ex-dairy sirloin comes from cows that have previously been used for milk production. After their dairy career ends, they're moved to pasture to rest and graze naturally. This extended lifespan — typically 5+ years — produces a sirloin with a deeper, more complex flavour, generous marbling and distinctive golden fat that you won't find in younger beef.
Both come from grass-fed native British cattle, but age is the key difference. Standard grass-fed sirloin comes from cattle aged 20-30 months. Our ex-dairy sirloin comes from cattle aged 5+ years — producing a firmer texture, more intense umami flavour, and richer marbling. It's bolder, more complex and a completely different eating experience.
Bring to room temperature for 30 minutes. Season generously with sea salt. Sear in a very hot cast iron pan with beef dripping — 2-3 minutes per side for medium-rare on a 300g steak. Stand on the fat cap briefly to render it down. Rest for at least 5 minutes before serving.
