Galician sirloin is cut from Rubia Gallega cattle raised in Galicia, Northern Spain for 8-12 years on natural pasture. The extended lifespan produces a sirloin with significantly more intramuscular fat than conventional sirloin — rich, savoury and complex in flavour. Boneless, it's easy to cook and carve with zero waste.
Bring to room temperature for 30-45 minutes. Season with sea salt only. Sear in a very hot cast iron pan — 2-3 minutes per side for medium-rare. Stand on the golden fat cap briefly to render it. Rest for at least 5-6 minutes before serving. The complex flavour needs nothing more than salt and heat.
