Porcini, cepes, Steinpilze: the same mushroom, the king of the European woodland. Foraged from forest floors between Tuscany and the Périgord, picked young, cleaned and frozen at source so the flesh stays firm and the flavour stays concentrated. The taste is unmistakable: deep, savoury, faintly nutty, with the smell of damp leaves and warm bark. A handful is enough to anchor a whole dish. Stir into a risotto ai funghi porcini in the last few minutes of cooking. Build a simple pasta sauce with butter, garlic and a splash of cream. Finish a beef stew, fold through tagliatelle, lift a mushroom velouté, or pile onto bruschetta with parsley and a slick of good oil. 1kg frozen bag. Cook from frozen, no defrosting required.

Cook directly from frozen. Sear in a hot pan with a little fat, or add straight into a simmering risotto, sauce or stew. Once thawed, do not refreeze.
